Fortunately mods for Stardew usually don't take long to be updated to the latest version of the game so shouldn't be too bad for too long.
Maybe what they need to do with SMAPI is have options as to what version you launch, would have to take that up with the SMAPI people though if its even possible (like in Minecraft, you can play whatever version you want to use any mod that ever existed).
EDIT: Disregard my entire post CA already gave us the option to revert to the previous update
