This program lets you easily play windows games on your mac. It works fine on my mac. Try Stardew Valley with it.
Try this:
Dunno if that'll work or not, I've never tried to run the game on an M2 machine (nor do I have one to check with). Regardless, it's a thing to try.
You might also want to verify your game files: Right-click on the game in your Steam library, Properties, Local Files, Verify.
Huh... interesting. Back in the pre-Catalina days, I used to sometimes run Play-On-Mac which did the same thing (but was a bit clunkier than Whisky looks to be).
My desktop is an old Intel chip iMac, so ... as long at it runs, I can still just boot Windows 10 using Bootcamp. But my current MacBook is an M1 machine and I've been looking for a way to run (at least some) windows games on it. I'll have to give that a try.
