That said, the biggest mods provide sizable extensions to the game. Stardew Valley Expanded polishes up and adds to the base game, while mods such as Ridgeside Village, East Scarp, and Luuna Astray add a lot of new areas connected directly to Pelican Town. Stardew Aquarium, Cape Stardew, etc... are other choices.
As for Overhauls, More Lively Sewers overhauls the sewers where Krobus lives, and Distant Lands does the same thing for the Witch's swamp. By, 'overhaul,' I mean these area's are expanded and touched up considerably. Again, I'm not sure what you specifically mean by, 'Overhaul.'
'Automate' isn't exactly an overhaul and may make the game easier in a lot of ways, but it will change the way you lay things out.
There are three Cornucopia mods that add a ton of new things. You can download one or all of them (one for just machines and artisan goods, one for new crops, one for flowers). There's a similar series of mods by Wildflour adding themed artisan machines and goods. Also worth mentioning the Animal Husbandry mod, which overhauls animals and adds meat products.
Or if you just want something new to do, you could try more of a challenge overhaul like a randomizer mod or a tileman challenge mod.
If you're looking to change the look of the game with a visual overhaul, there is no all-in-one. You will have to shop around and change foliage, buildings, furniture, grass, icons, etc. individually.
