Mods I would recommend for you:

If you don't mind cheating and basically making fishing as effortless as it can be.
*Fishing Made Easy Suite[www.nexusmods.com]
If you still want to make fishing super easy, but also want to get good at it but at a much slower pace (this mod allows you to decrease and increase the difficulty to your own liking).
Step 1:
Visit this site: https://smapi.io
Step 2: Click the big green 'Download SMAPI 4.0.7' button, download it.
Step 3: Extract the thing you downloaded, and click the file that matches your OS (IE, On Windows, click 'Install on Windows.bat'
Step 4: Follow the instructions in the prompt appears.
Smapi should now be installed properly.
Step 5: Navigate to your game install location
IE, D:\SteamLibrary\steamapps\common\Stardew Valley
Step 6: There should be a 'Mods' folder in there now after installing SMAPI, click into it.
Step 7: Now take your mod that you downloaded, extract it, and put the contents in the Mods folder from step 6.
Step 8: Verify that the mod you just installed has a 'manifest.json' file in the top level
IE: steamapps\common\Stardew Valley\Mods\CJBCheatsMenu\manifest.json
If there is a manifest file here, then you installed the mod correctly; If there is not, then you need to remove one layer of the folder (likely the modder packed the mod incorrectly)
Step 9: Repeat 7 and 8 for every mod. Once you get used to it you can spot whether you need to do 8 at a glance.
One final note, After installing Smapi you either need to launch the game from the "StardewModdingAPI.exe" inside the game folder, Or you need to have done the "If you use Steam do XYZ" bit from Step 4 when installing SMAPI.

There's another way to get the fish you need. Look up item codes. Find the ones you need. Go to Marnie and buy a chicken and name it with 2 or 3 or the item codes with these brackets [ ] around them. Some of the numbers can fit 3 codes per name, others can only fit 2 codes, so you can get at least 2 of the fishes you need for each chicken named. Afterwards you can sell back the chicks. You need to open the game by opening SMAPI, or if you use Vortex, open it through vortex. Using the Vortex mod manager is easier for someone who isn't used to modding.
If you launch it through Steam it'll open the unmodded game, unless you change in the Steam game setting where it launches from, but I couldn't get that to work after the update so I just launch through Vortex.
It's extremely unlikely there will ever be Workshop support for this game.
Eric Baronne (frequently referred to by his handle Concerned Ape (or CA)) is an independent developer, as such, he's keenly aware of the pressures facing other independent developers. He's also keenly aware of just how much mod creators add to the community.
The Modding community is already firmly established on places like Nexus Mods, and many of mod devs have revenue streams associated with their work there.
If Workshop support were added, it would make things much easier for players but would in turn make things harder for mod creators, who would lose revenue and (in some cases) even have work they'd done reposted by others, loosing even credit for their work. This would be bad for mod creators, and would stifle mod creation (to a greater or lesser degree) going forward. As such, it's not really something CA wishes to do.
It's better for SDV overall to support the mod creators, even if that makes things a little more work for players.
