you should still get the winter outfits ,
If no then I think you should do the .xnb way of replacing game files with modded portrait. Theoretically, it still works unless it's hd portrait. Look up on stardew wiki about modding.
Alternatively, learn coding (actually just understand the content pack files like manifest one) and add the part for winter outfit.
The creater redrawed vanilla winter outfits in their style and it looks amazing!
