Lava Eel Expected value is .911 roe per day, with 10 in a pond. That's 692.36 G per day, just from roe, plus extra gold, spicy eel, and magma geodes.
With Artisan, you're looking at an expected 833 G per day per fish pond for Sturgeon, and 969.3 G per day per fish pond for Lava Eels (turning 100% of roe into Aged Roe/ Caviar).
Lava Eel has the highest sell price for it's roe, so that's the best you're gonna get. Do with these stats as you will.
The only things worth putting in the pond are Lava Eels, Blobfish, Super Cucumber, and any cooking ingredients (such as Squids for Squid Ink or Midnight Carp). Caviar only sells for like 500g and takes awhile to make so its not really worth.
If you have a flounder, midnight carp and midnight squid pond, it will be way easier to get that seafoam pudding.
And as you can gather everything necessary waaaaaaay before getting said statue... ponds are probably still a worthwhile investment. Ore of this kind doesn't grow on trees.
my top picks for fish ponds are super cucumbers for early iridium , the super-popular lava eels for gold ore and money, blobfish for pearls and warp totems, rainbow trout for the change of prismatic shards; also the rue of those is worth a decent amount as are the fish.
other than that it can be useful to keep things like woodskips for the hardwood or lobster pot fish for their respective warp totems.
also most fish reach their max production at 9/10 fish, so when it reached 10/10 you can fish one out and sell it for extra profits with no loss to production... tho I think some require 10/10 so probably check the wiki on that.
