You can do either choice in the cave. Mushroom cave should still be better on average money per week, but honestly that money gets outstripped pretty easily by everything else you can do.
It feels more like a choice of how you want to get the greenhouse done. Do you like fruit trees or do you like mushroom logs or do you like both.
I've been trying out the fruit bats for the first time and it's nice not having to buy a couple trees just to complete the greenhouse so I can then plant them all in there. No consistency in getting apples until mid winter though.
I was thinking maybe the new mushrooms would be good for healing because I never beat the desert cave and I heard there is more late game stuff that I should be prepared for if I want to go deep and what not.
As for moss, it will grow more on older trees on your farm, so dont chop them all down, And some time in mid summer you will get a day of green rain, and there will be strange trees and weeds every where, just clear the weeds and the moss trees all over the place then to collect lots of moss.
