But assuming you go with starfruit or ancient fruit and then kegging it to wine - You would go for Artisan. And you would go for Botanist anyway unless you doing some sort of challenge play-through or something.
So...
Truffle with Botanist (iridium) - 1250
Truffle oil with Artisan - 1491
Difference isn't that big, so if you don't want to spend a little extra time processing truffles regularly (and also crafting and placing all those oil makers) - just sell them as is.
Also depends on how many pigs you have - processing less than 10 truffles a day is one thing, and processing 100s is another.
It is really up to you to consider if it's worth your time.
Personally, I don't have more than couple of pigs on normal play-through - wine money is enough to cover all my money needs - and a couple of oil-makers I have are able to keep up with their production (and you still need to make at least one for crafting achievement anyway if you are going for perfection). But I also don't rush through the game time-wise (both in-game and RL).
They aren't even considered a forage (they don't ahve a Forage tag and not a part of Forage list for Grange display) - but do benefit from Gatherer (chance for double) and Botanist, and give Foraging XP.
