you need to make lots of money....somehow. if you don't like anything about the farm (no planting, no animals) then you're going to have a harder time.
you can fish for money, you can explore the mines.
if you're going to go no farm route, then you'll probably want to do a joja playthrough (not community center)
however once you upgrade some tools and get sprinklers, the farming stuff is very easy. doesn't consume much time and is very passive overall
however if it's not just farming, but also things like the mines you don't like, then a game more focussed on the talking to people in town might be better for you.
My suggestion would be to minimise farming. There's no need to go all out and farm loads of crops. At the start of the game, it just uses too much energy in any case. By minimising farming, you'll have time and energy to fish and explore the mines. Once you're able to make sprinklers, farming gets a whole load easier. That's not to say don't continue minimising - there's so much to do once the Skull mines are open and you reach Ginger Island, I find it's best not to plant too many crops in any case.
With respect to animals, I tend to leave purchasing any until year two and then just go with the minimum. The animal crackers that are part of the latest update are very useful in this respect.
Minimising planting crops and not purchasing animals until year two would give you time to do the things you really enjoy and allow you to increase your farming level enough to make sprinklers available. Mining also allows you to upgrade your tools. An upgraded watering can and hoe make a difference energy and time wise as well.
I would recommend to keep a small garden going so you have a little bit of everything for quests from the villagers but besides that do the things you like!
The 'needing alot of gold' is mostly to upgrade your farm and get more and more production going so its not really needed for the gameplay you want to do.
However if you play vanilla you wil be done exploring pretty quick and interacting with townsfolk will go stale soon aswell so for a playtrough like you want I would say to add expansionmods so you have much more to explore and much more npc's to interact with
The core and basic gamelopp of the game is still run your farm and generate money (this does not explicitly say how you farm should be coniss of) - evne though it can be suplemented by eg fishing and mining, I would say those are even worse (jsut fish 1-2 hours in row is super fun?)
Sure there are NPCS - but you are basically done with them once experiencing heart events with each, which is in all honesty just few lines and smile there and there.
There is some new areas to explore but nothing that would be probably breathtaking - also msot is revolving around how further devlop your farm at first place.
There are mods with new NPCs and areas you can taste buf if you really want neglect farm completely, imho it will be very shallow expeerience.
As for harvesting, once you finish the community center you can hire Juminos to harvest and plant seeds for you, making it easier.
There are ways/mods to make it easier, I have the tractor mod, which makes all farming tasks go really fast so you can spend most of the day doing what ever you want.
And if you have the Ridgeside village mod, there are guys there you can hire to feed your animals, fix your fences ,and take care of you crops.
So with all the suggestions given above, you really are your own boss, you decide how to spend your time,
Oh and the tractor can also make mining really easy too.
In addition to what other people have noted, there's content locked behind having all skills at 10, including farming.
HOWEVER, animal stuff increases your skill level too -- if you choose the Meadowlands farm, and focus on ranching instead of crop growing, you should make decent progress.
There's a lot of farming automation possible as the game continues, but you still have to get your skill up to that point. If farming isn't something you enjoy though, goodness the feeling of reward when you can stop doing it....you'll get some extra dopamine I think. =)
Perfection (beating the game) requires you to ship one of every crop (amongst all the other things). I have been playing since release on one platform or another though, and uh, I have never beaten the game (I have a bad case of restart-itis). SO! Really it depends on what you want (I'm gonna do it this time).
Greenhouse also gives you an alternative. Once you unlock it, you can plant recurring plants on quality soil using sprinklers. This automates everything about the farm except looting the products. So you just show up every day and loot the place.
