it's something you can do in real life, indoor or outdoor. they could be place-able and produce in season for multiple years, harvest-able after the logs have set

That is in the game. You get the mushroom log recipe at foraging level 4.

Lucky for you Mushroom Logs were just added in the recent update, you just need to get level 4 foraging to craft them, and they require 10 hard wood and 10 moss each.
