I sold my legend fish by accident

Nope, only once per save file. Unless you are using mods :>

Use the Recatch legendary. Warning ahead that the mod is pretty cheaty tho.

If it helps, willy actually has a stock of fish you sold recently, check with him and you may actually find it in his stock. Not sure how it rotates but it has fish from multiple days prior i believe. Same idea as pierre having your sold veg in his shop.
