It seems like age of the tree matters. all the ones i kept alive to tap are my best source of moss. The ones I regrew for wood dont seem to ever have moss.
theres multiple crafting that requires moss! ex: deluxe bait now where you combine normal bait and moss, which makes fish more likely to bite than normal bait and the fishing bar is bigger. and also moss soup now!
The special trees that only spawn during the rain will disappear overnight, but moss will be found growing on normal trees and will persist until you harvest it (which you can do by using any tool on the tree).
One green rain gave me about 110-120 moss, and I wasn't even trying to scour the entire valley for every bit I could find.
those should be able to let you harvest moss, assuming you can grow them.
(ive only seen them drop on a video yet.)
