Game actually has some pretty deep lore.
For a farming game, I'm pretty impressed with the lore. There seems to be a lot of stuff about the mundane clashing with the unexplainable.

I have seen some things that do suggest the 'magic' present is more technological in nature.

However, I have not uncovered enough of the lore (not even close I imagine) to make any reasonable conclusions.

I also remember hearing about a war between the United States analogue (Stardew Valley is on the southern coast of this country) and an Imperial Japanese analogue.

Anyway, all I can say is that I'm impressed by this games lore and I am enjoying uncovering it.

The war interested me a lot, I really hope the developers expand on it more.

I love the magic part as well, I started the game thinking that the Wizard was just a crazy guy living in the forest but as I progressed I learnt so much more and it really intrigued me. Again I hope there's more expansion on this.

Trying to avoid spoilers as much as possible :P But each of the townsfolks personal lore is interesting as well. They each have their own gimmicks and traits that are revealed as you become better friends with them.

I think Harvey, Maru and Sebastian have the most interesting friendship stories though. You can definitely tell the developer wanted the player to 'feel' for different parts of the game.

I definitely need to start focusing more on getting some friends.

I am also interested in the desert. I still don't know how to get there but I assume it has to do with the old alcoholic who lives in a trailer (used to be the bus driver).

It's one of the rewards of completing a section of the Community Centre (the vault I believe?)
I like the lore as it is now: present, but vague. There's lore to be found reading books and talking to villagers, but it's not presented as any sort of main story, it's entirely in the background.

It's vague in the sense that there are analogues like the war with the Gotoro Empire as OP mentioned but it isn't crystal clear what exactly everything is supposed to be or represent.

For me, it's like Hotline Miami 1 vs Hotline Miami 2. In HM1, there was a lot of lore that you had to piece together yourself, and even at the final end game when you've got all the pieces there's still more unexplained. Then Hotline Miami 2 promised to answer all the questions. HM2 explained everything in such excruciating detail that I was disappointed how all the mystery was obliterated. The allure was lost because the possibilities were gone.

So I'm fine with SV offering a window into the lore while allowing some of it to be open to speculation.
