Fish, tree taps, greenhouse if you were lucky enough to complete it, and animals.

Complete the winter foraging bundle of the community center, it will reward with seeds you can plant during winter.

To add to the very good suggestions -- mining! It's also a great time to build relationships.

If you don't like fishing/don't have a lot of animals:

Pickling eggplant (170 ea.) if you can make a fair number of jars.
Blueberry jelly (210)
I think pickled pumpkin was good too but can't recall price on it.

Tree taps are good but again, need a lot of them and if you've chopped most of your trees down etc., out of luck.

edit: you can also endlessly hoe the snow-dirt and get the yams and winter things that pop out and sell those for a fair income, actually. But that's about all you'll be doing...hoeing dirt...

Yes Winter Seeds if you Complete the Bundle then make more Seeds in the Seedmaker
you can also Search for the Winter Root with your Hoe and make seeds with them
Use The Crystal Fruit in The Preserves Jar for big deal

You don't need the seedmaker. All you need to do is collect 1 of each type of plant, then craft the seed packet. Snow Yam, Winter Root, Crocus, and Crystal Fruit. From 4 plants, you are guaranteed 10 seeds. (Even more if you have the perk that doubles your foraged items).

I keep growing them all season long. When it gets close to Spring, (less than 8 days), I keep a stock of 100 seeds for next winter, then Make wine from the Crystal Fruit, and sell the rest!

I don't make much money in the winters. My first winter was spent in the mines, and I blew a lot of gold on weapon and equipment upgrades. And tool upgrades, and a bunch of fruit trees. I made almost all of it back by the end of spring year 2. My 2nd winter was spent putting excess fruit into the kegs and barrels, doing some mining, working on relationships. Oh, I had unlocked the greenhouse so spend time there. I made some money there, but not like in the other seasons.

^^ I find that winter is best for doing all the things you're too busy to take care of during the other seasons... like planning farm layout, cutting back the wild growth, upgrading tools, building animal structures, etc.

...cutting back the wild growth...

I did a lot of that my 2nd winter. Culled the wild forest by 80+%. Too much really. Started replanting trees the next summer.

used the time to upgrade my tools, and running around all day in search for the worms that drop artifacts and books, u see them really easy in winter...

During spring I harvest all the wild salmonberry bushes, and in the fall I do the same with blackberries. In addition I grow plenty (like 32 plants) worth of blueberries and cranberries in the summer and fall. Plus I store various amount of non-silver and gold veggies or other fruit, especially wheat and hops. Then I spend the winter making jelly, pickles, wine, beer, and juice.

Right now I have 16 preserving jars and 15 kegs, and it keeps the income rolling in during the winter. I actually need to build about 50% of each because I have more fruits and vegs stockpiled than I can jar and brew this winter and will likely sell off a tons on Winter 28.

Other than that I focus on building relationships, practicing fishing, mining and doing the help wanted ads from the bulletin board.
Thanks everyone for all of the tips and support. I can see this being an awesome community to be apart of.

Trees out side the farm seems to regrow on their own. You can hit them once to get them to drop seeds.
