You can put kegs anywhere you want. If you want to save space, build a coop or a barn and put them in there.
You can grow any crop all year long in the greenhouse; why would you not do that?!?

And you can just put kegs around the edges of your greenhouse, if you really insist.
edit: It never occurred to me to put sprinklers on the edges. Off to make more sprinklers...
When i was setting this up i was gonna use the 12 sprinkler setup but then i rearanged because the hops are on the stands so you cant walk through them.
That's entirely up to you, of course, but I'm curious: why not use the greenhouse to its full potential?
Putting any non-crop on the tillable land is an incredible waste of space. There is literally no reason to do so, other than perhaps a personal aesthetic preference.
I'd probably go for bluberries (or maybe cranberries?) for selling straight, hops for pale ale or starfruit for wine if you have access to the desert.

I've heard that she stops selling them once you actually plant one, though I'm not sure about that. Just something to keep in mind. Maybe try to get a couple off her before you start planting, to be on the safe side.
No, I bought one, planted it in fall, harvested it, and used it. The next year I bought 3 and planted them in the greenhouse that winter. I haven't seen them since, but it's RNG so hard to say.
If you don't have ancient fruit you can plant anything else, prioritizing the crops that you don't have to replant since they will last forever in the greenhouse. Cranberries are great you can make mass production of jelly/wine.
Or you can plant valuable crops out of season, like pumpkin, melon, red cabbage if you have the seeds.
