Also, since Sturgeon is one of the hardest fish to catch in the mountains, if some fish are escaping your line when you're fishing there, those are probably the Sturgeons. Keep trying, and if you still can't do it, put in a Trap Bobber and/or eat a meal that gives +fishing.
There are some fish that can only be caught in "deep water" which is determined by how much the cast is charged such as legendaries, while some fish are more likely to be caught by very short casts.
on a side note, am I the only one who doesn't find fishing hard in this game, aside from legendaries? granted I'm terrible at combat
Legend can be caught anywhere in the mountains. You can test that yourself. And I've caught Mutant quite far from where the Wiki said I should. I have a feeling that the same is true for the other Legendaries in their own habitats. The idea that any of the Legendaries can only be caught in one particular spot may be a myth that's perpetuated by the fact that most people will only catch one of Crimson/Angler/Glacier ever, and probably went to the Wiki to check where to do so - meaning that the information that the Wiki provides on this may have become an "agreed truth" despite possibly not being true at all. Self-perpetuation.
Testing this would take too long, but again, Legend definitely has no single spot (I've caught it all over the place in the mountains, at the right times of course), and like I said, I caught Mutant nowhere near where the Wiki said I should've. Furthermore, the Wiki contains some other information about fishing that is demonstrably untrue, further weakening its case.
As to other fish, that is an absolute no. I've already run very exhaustive tests that concluded that fish are not at all more or less common in any specific spot within their general habitats, nor is type influenced by anything other than habitat, season, weather, and time of day.
Distance from the shore does have a strong effect - on quality of fish caught, and some other factors, but not on fish types.
Only a few fish are hard once you max fishing. Most people who complain about how hard it is have low level fishing.
