The save files are located at %AppData%\StardewValley
Standard xml...
You should be able to find and replace it with a simple textsearch.
Just make sure you don't rename the original npc because that would make your game crash.

Open a windows explorer instance and put %AppData%\StardewValley in the path thing field.
That should geht you to your Stardew Valley folder inside the AppData folder.

Open your files explorer thingie on windows, look for the adress bar and type %appdata%. That will take you to a folder. Inside it, find "Stardew Valley" and there "Saves".

You want the file starting with your name and ending in some number.
It should have around 2 to 3 MB.
You should be able to find the name you want to replace with
<NPC xsi:type="Child"><name>Vincent</name>

Make a backup before you modify anything.

You can try it.
The files rather big. Some editors have a problem with that.

You should make backup files of a file before messing with it, so that in case of problems you can just revert back to the original one.

If you've not made a backup file, then i guess you need to restore the file manually, preferably to what it was before.

I know this is an old thread but I thought I'd add to it for anyone searching, like I was. If you do mess it up, you can restore from the previous day save, the file marked _old. That's also a useful trick mid game if you make a complete bollox of a day and want a do-over. If you're not sure how to do that, there's a Reddit thread with step by step instructions here: https://www.reddit.com/r/StardewValley/comments/196fi7u/going_back_a_day/
