FYI, Corn is an excellent crop for the summer and fall, since you only plant it once and it continues to produce through two seasons.
If you're looking to maximize, keep expanding your fields. (Sprinklers help a lot with the tedium, especially if you buy the best ones from a certain vendor who carries them from time to time.)
Thinking about selling all the animals once I get the needed stuff for community center, they take up way too much time if you have 16+ of them.
On the other hand if you dont invest into mining you will be totally screwed without upgraded tools and materials needed to make sprinklers, trying to grow stuff by manually watering everything takes half the day. Mining is lot more important then fishing in the beginning.
