Personally, I wear the Lucky Bow. It matches my outfit very well.

My current character I only have 2 chioces. So I went with the bow as it didn't hide the hair in cap. Both bought from the cute mouse. :p

I don't really like how a lot of the hats look. If I were a female character the bows / clips / etc seem like they might not be too bad.

Straw Hat all the way. Although right now I don't have a lot of options, but the Straw Hat is very solid.

I've been wearing the Official and Cool Cap. Both coordinate with hair/outfit well without being too over-the-top. Plus I like blue.

Once I can be arsed to get the Beloved Farmer achievement, I will be wearing the Cat Ears. Forever.

In retrospect, I might switch over to the Trucker Hat at some point.

Can anyone confirm whether or not unlocked hats are persistent from game to game? That is, if I have unlocked something (say, the Sombrero) that is tied to an achievement, will I be able to purchase the sombrero in a new game without having to perform the same achievement again?

Unfortunately, they do not. On my first file I had the Watermelon Band and something else I haven't gotten yet on my new file. Each file starts from scratch.

My guy was wearing the fedora for a while then switched to the cowgal hat. I'll switch to the cowpoke or cowboy hat if I ever unlock those. There's nothing else I really like.
