Your plants won't die missing 1-2 days of watering, though, so don't worry too much. Just try to plan it out next time. The upgrading always takes the same amount of time no matter what level (copper, steel, gold, ect) so you always just need one rainy day for the watering can.
You can also use a holiday as your "rain" day for other tools like the pickaxe or axe since you wouldn't be able to do much those days anyway you don't really lose out on not using the tools much.
Also, you're in Fall and you hate running to the mine? If you put some time into the mine (i.e. during a rainy day) and collect stuff for the mine section of the community center (it's fairly easy to unlock, it was my first) it'll unlock mine carts which basically give you a shortcut to the mine and the blacksmith's place. Makes traveling a lot easier. Of course you can always just wait till Winter at this point too. Speaking of Winter, nothing grows then (except the Winter Seeds which are the Forage items) so that's also a good time to upgrade your tools.
