It varies on how much work you want to put in, if you want them to be multiple harvest or are ok with single harvest. Length of time you have till the season change, if you just want to farm a single thing as long as possible or trying to really push the profits.
Generally speaking you make a lot more on things that take longer (which can be great with reduction in growth times) and multiple harvesting generally gets less from first harvest but adds up more long term making corn a favourite to some.
So far I tend to like the longer harvest stuff but for fall cranberries are my favourite. They are multiple harvest with a chance at multiple berries per crop harvested. Can't remember my spring choice but I also like melons for summer.

Out of everything in the game, or out of the seeds in the store the first year?

Out of everything in the game, it's going to be either star fruit, ancient fruit, or whatever the rare seeds grow. Thinking star fruit, but I can't say for certain yet.

Out of the seeds you buy at the store the first year it's Cauliflower in spring, blueberries or melons in summer, pumpkins in fall.

It really depends on what you mean by "more money". You'll be able to save money once you can start making your own seeds; but different people play different ways. Some don't even farm, they fish or mine or forage for their money. Others ranch, using all their free land for growing grass to make hay with. Still others prefer crops that re-grow, or fruit trees.

If you're asking about the single most valuable item in the game... I haven't bothered looking, sorry.

To be fair the rare and ancient seeds take a long time to grow and get in large amounts so can't really be counted as a crop to easily farm. I have my greenhouse set up for those 2 and they are very slow to increase in size still limited to a small section. Even then it is questionable on which is best due to how much work and such you put in. Rare seeds only get a single harvest but the ancient fruit keeps giving fruit so can expand it faster with seed maker. The growth times are also limiting with the seasons without a greenhouse. I think most crops are fairly even based on time to money but some are going to be more profitable and more open to money making. However in the second year you can easily just be completely loaded with cash (heck even late into the first year if you know what you are doing and work effectively on it) so it is often more the case of how you want to farm the crops than what to farm.

Which fruit or vegetable is the most ROI isn't a matter of playstyle choice or opinion. The answers are set in stone: cauliflower in spring, blueberries/melons in summer, pumpkins in fall. But that's only out of the store bought seeds in year 1, I don't have enough information to judge every crop yet.

The reason blueberries or melons is a matter of choice is because blueberries give variable amounts of harvest and melons are steady. With good RNG blueberries are way better, with bad RNG melons are better. On average blueberries should edge out melons, though. That's the only one where it's a matter of choice.

Yeah, that's basically why I say it's probably star fruit.

Part of my point was that you can basically be swimming in money fairly quickly and you would make a better choice with play style over total profits. It also is division of time, some crops take a lot more work so you can't do as much of something else like mining or fishing. It is best to find your prefered method over trying to get as much profit as possible. I understand some are simply better but I side with the view of having more fun over trying to be as rich as possible.

I typed that before I saw your post. I'm not disagreeing with you, but it's not the answer to the question the OP asked. What thing gives the most money is a factual question outside of preferences. Apparently OP's preference is to get the thing that makes the most amount of profit, which can be determined mathematically.

For reference, I only ever plant fruit, I don't care what's the most profitable. I'm in the wine making business. But I don't see the point in telling the OP that it's a matter of preference when they already stated their intentions with their question.

To be fair the most profitable crops are still going to be different on set conditions. It is also questionable about details like fertaliser for better quality or faster and the combination of level perks also. Maybe someone has worked it all out but at the moment I think a lot of it is guess work. The fruit from rare seeds for instance can sell in the 3k mark but the seeds cost 1k and the growth time is slow. Add in the fact you can get a seed or 2 a week from buying and not using the seed maker it isn't really possible to farm without a huge comitment of time. I also have doubts on some other factors. Just a load of factors and think only the surface information has been touched.

Well, like I said, I can only tell you which are the most profitable out of the seeds Pierre sells in year 1. Everything else is still unknown, but that part at least is known already. Califlower, blueberries/melons, and pumpkins. I have no idea how star fruit, ancient fruit, and rare seeds will play into it nor the new seeds that Pierre starts selling in year 2.

A few little things there, from what I gather is the skull caverns, a shop, some extra items like coconuts and such and also Mr. Qi's stuff (I kind of semi abused a bug to see the upstairs of the shop but didn't do anything there till I unlock it).
