How to catch the fast (king)fish?

Keep trying. Chances are pretty good that you'll also need to upgrade to the Iridium rod and use the tackle that causes them to escape less quickly and keep leveling up your fishing skill so the green bar is larger.

No, you get them random. You can recognize them by a tiny little crown on the fish while catching him

There are five legendary fish. One of the lost books that you can find for the library will tell you where and when to find them.

Then I got extremely lucky because I found them several times!
Couldn't catch them though...
