you can right click to choose only one from a stack, if there's a way to split in half, dunno yet.

Shift right click to split the stack in half.

Also if you hold down right click it'll pick them up one at a time quickly. You can do that when buying and crafting items as well, hold right click does it fast like it does in Terraria.
