Do I want something quicker paced or slower? If slower/relaxed is more your goal I'd say stardew. It also has more mods if that matters to you.
Sunhaven doesn't rush you, but you will end up doing a lot more running about comparatively.
I'd say go with the game that has the setting that you prefer, but If you can't come to a decision then go with Sunhaven. The Sunhaven discord is friendly and has a dedicated modding and game-help thread.
It looks ... I dunno ... less realistic? Not that SDV is very "realistic" per se, but It has a visual internal consistency that I like, whereas the visuals for Sunhaven look more ... over-the-top, if that makes sense. The character portraits make it look like every character is an anime protagonist, which seems like it would get ... tiresome.
But ... like I say, never played it.
I have 863 hours in Stardew valley. While only 251 in Sun haven. The reason why I so much more in Stardew is due to mods. Concerned ape made modding for Stardew easy. So there are a lot of mods available for it over on nexus mods. Adding in a ton of additional content for the player.
If mods were not included, Sun haven does have a lot more content in its base game then Stardew has.
I do have it on my Steam wish list though, as it looks really cool from what I've seen coming from someone that enjoyed Stardew a lot. Unfortunately, based on the system requirements listed on the store page, I need to get myself a better computer as my graphics processor only has 1GB of video memory and the game itself requires at least 3.
One of the main benefits Stardew has over other farming games is that this game can run just fine even on a potato rig, so even on older and outdated computers, you'll hardly run into any major issues at all.
Seeing as how so many people love this game, I simply wasn't part of the target audience, as I was expecting a relaxing game without time limits.
