Do you pet them?
Do you have a heater in Coop?
When do you close the coop doors?
Also, when you close the coop doors, do you count the chickens inside the coop?

Have you fed them? Even if you open the coop door and there is grass outside there is a possibility that they are not eating the grass outside

Yeah, spotted the problem.
You have to pet them AND close to Coop doors in the evening.
IF I recall correctly, animals begin going to Coop/Barn around 5:30PM in the day, and depending on their distance, can be in by 7:30 or 8PM. Then you have to close the doors.
Animals are more attention hogs than plants.

You don't actually need to close the doors inside your coop/barn to keep them happy. I have never closed them myself and they have never gotten grumpy from leaving them open.

However, if you lock them outside overnight by shutting the doors before they go back inside for the night, they will become grumpy. If they make it through the night, that is...

I've had events where I had wolfpack attack in the night and animals missing from Coop/Barn afterwards when I didn't close the doors. So, ever since that, I close the gates.

Weird. My experience is that closing the door is completely optional. Animals won't get locked outside if it's shut, nor will they be grumpy if it's left open. I only find them stuck outside if they are caught outside a closed fence.

Also, petting or not petting has nothing to do with grumpiness. They get grumpy when they didn't eat yesterday. Petting helps cure them of being unhappy, and not petting will let their friendship decay, but even having zero friendship doesn't make them grumpy. Grumpiness is purely attached to food. Friendship is attached to size/quality of products (eggs, milk, etc).

The only time in all my playthroughs when I found an animal stuck outside (and it was not fenced off) was when I went to bed very early (before 5pm, which is normally the time the chickens head inside). Since the day ended while they were outside, I found them outside the next morning.

The coop door had been closed that time, but I know that wasn't why they were stuck outside. Watch your coop or barn any day around 5pm and you will see all your animals phase right through a closed door as if it were open. A closed door keeps animals from leaving the building, but does not prevent them from going into the building.

you can keep the coop/barn door closed all the time just makes raising heart level slower. if you have pigs they do have to go outside to find truffle

Pets have 2 values: friendship and mood.

Friendship is the overall affiliation to you, which is basically just about you not forgetting basic needs and petting them. You can let them eat outside to boost it furhter.

And then there's Mood, which is a bit more complex. Letting the animal eat outside will always set it to the max, otherwise petting, feeding, heater in winter and letting them outside raises their mood, while ignoring these things decreases mood.

And overall you want to have both things as high as possible, since it raises the chance of getting better products.

And as others said, you can leave the door open, even in winter. The animals will only go outside if it's the right weather and not closing it makes sure, that they always get back to it (and you don't need to waste time counting them or looking around). There are also no such things as wolf attacks, unless you add them with a mod.
Because they miss their darling Shaneypoo. :sleeping_bird::wnheart:

pet them once a a day helps with happiness, if you put something on grass like a fence I normally use lighting rods, they wont eat that patch of grass so it canbe used to grow more. heater is needed in winter or they get cold.
If you use mods i think there is a pet patting on so click and it does all animals at once.

I never close the doors.
All i have is a heater. I go in and pet them. They have never been grumpy unless they are out of food.
