What to do with fish?
I’m aware we can sell them, and make a few food items, but like,, if I get an iridium star fish, what now? Apart from selling it for cash or storing it away, I mean, I really don’t know what I’m supposed to do with fish..

If you're running low on energy, you can always eat it to regain some more for the day. Useful if you want to do more fishing for even more extra money but you're about to become exhausted.

sell, eat for energy, turn low value fish into sushi
honestly thats the answer to most edibles, but replace sushi with another processed food

Well we’re not going to eat iridium grade fish, but there’s really nothing special to do with them? Like,, making food with them won’t result in higher grade foods? I’m not aware of any events where we’d need to hold onto a bunch of these, but at the same time I’m not sure how much these fish sell for, compared to the products I can turn them into. It seems weird to just, catch fish and immediately sell them.

Check to see if it's for a community center collection - assuming you're gotten the community center quest set up - by mousing over it on the inventory screen to see if the tree button on the top right is oscillating. The second thing you may want to reserve the fish for is for a future fish pond. Midnight carps and squid, sea cucumbers, and various eels are good candidates for ponds due to their produce. Besides that, it's up to you - you can usually just turn them into sashimi (Linus 3-heart recipe) easily, eat them straight or sell them.

The significance of the fish being iridium grade is mostly just for sell value.

Not in the base game, no. There are mods that give you that functionality, though.

One thing to do with a high-quality iridium fish is use it in the Luau. Super Cucumber is best for that, but anything with a high sell value + high health restoration amount should give you the best outcome for that event, which then gives a sizeable boost to friendship levels of everyone in town.

Beyond that, as ULTRA said, mostly higher quality fish are best sold.

Certain Iridium fish make for really good gifts:

Abigail- pufferfish
Willy- catfish, octopus, sea cucumber, sturgeon
Wizard- super cucumber
Penny- sandfish

They'll give 120 friendship as a normal gift, 600 as secret Santa gift and 960 as a birthday gift. Each heart on the friendship display is 250 points.

Huh, ok, so mostly food and gifts for people who like fish. I’d been working under the impression that people mostly just wanted gifts they like, and the quality didn’t matter much. I’ve been giving people blueberries and corn..

And what does that do? Can you still see their rank? I figured the “seed fish” in a fish pond might matter, but I get the implication that fish ponds just breed lots of normal fish, nothing special.

you can check the tank to get them back and u can see the rank there, also they look cool
Give them to Leo to play with in the pond.
