What I would suggest is that you first make a back up of your old local save data.
I'm not currently running the Mac OS, so I can't check the exact path, but try this:
Go up to the "Go" menu, press-and-hold "option" and then select Library.
Look for an appdata folder. It MIGHT be inside a Steamapps folder.
look for config, then StardewValley then Saves.
The files in there should be the most recent version of your game. Copy those, and then put them in exactly the same place on your new HD. Then when you try to play the game, make sure you're using the local files when you launch. You should be able to deactivate the Steam Cloud by right-clicking on the app in your Steam Library (should you need to).
Do note, if your old save was from prior to 1.5, then I can't promise that they'll still work perfectly. (It doesn't mean they won't, but it's a possibility to be aware of).
At some point this evening, I'll probably be switching back over to the Mac side and I'll check the exact path and edit my post.
There's also this: I don't usually use the "go to folder" method, I prefer to navigate to the correct folder manually, but ... should work: https://stardewvalleywiki.com/Saves
