Important ones can't be deleted.
At the end of the day that you give Pam the ale, a cut scene will start when you crawl into bed. In the cut scene, you will hear a knock at the door, and whe you answer, it's Pam.
"Hey kid, you want to share this fine bottle of ale?"
Then she gives you some ale, and when you drink it, you kind of fall asleep. Just before you fall asleep, you have this vague memory of sitting in bed with Pam passing he bottle back and forth.
The last thing you remember is Pam saying "Don't bogart that bottle, my friend. Pass it over to me."
When you wake up the next morning, Pam will be there in bed with you, werning nothing but a smile and a toe ring.
"Kid," she says, "you can share a bottle with me anytime. And I do mean any time."
Oh the one you get in winter? Yeah, that one is very important. You miss out on a lot if you don't do that one. If you're still on the day that you deleted the quest, just quit the game and you can reload to where you had it. If you deleted it on your previous day, there is some way to restore the game to the previous day I think, since stardew valley keeps a backup. If two or more nights have passed since you deleted the quest, you're out of luck.
