If you have a greenhouse you can raise crops at whatever time of year.
If you have winter seeds you can raise winter forage plants
There are several possibilities ;)
or, animal produce, and Greenhouse may also count. but for greenhouse, it's better if you have a seed maker, so you can get a crop and still replant it later, if it is a single-harvest crop
If you craft enough winter seeds you can just keep on farming like usual.
Tappers are slow but if you can make a lot of them and stick them on spare trees, they help some as well.
Go dig the beach if you ahve upgraded hoe. Net you 3-4 k a day. and pick up all crocus and crystal fruit you find, craft all seeds you can, fertilize and farm the ♥♥♥♥ out of it whilst you can. 3-4 week you will be swimming in cash :D
Also save all crystal fruit and make wine from it.
If I recall correctly it was 10 Wild Seeds for each craft. And you'd need Foraging Lvl7 to be able to do it.
If you have it in your crafting menu, there's a little red number in a lower corner that tells you how many per.
Snow Yams (hoeing) and Crystal Fruit are worth the most, if sold as-is/"raw." Basic no-star version is 100 and 150, respectively. Like any Wild seeds, if you plant them, which ones you get are random. No way to control which type. Crystal Fruit seemed to pop up the least often, when I was trying it.
30 "packets" from the Community Center is 30 plants of varying type. Just like 30 corn seeds = 30 corn plants.

I did my winter money with harvesting forage and fish.
The way I do it, is starting to dig one tile at the time as close to the water as possible, as soon as u find root/clay/fruit dig upwards in a straight line, all the tiles upwards will drop whatever u found in the first tile.
So basicly, dig along the shoreline, dig upwards when u find items, then move up one tile and repeat.
Yeah, its an exploit i guess, but not super game breaking imho.
Earns you 10-20k on a good day.
Edit: afaik it works wherever u can use the hoe (at least the places ive tried)
Additionally.
Go to someplace like the desert or beach, Start hoeing the ground (Possible that bombs may work to "hoe", I do not know if they reduce the chance of finding things)
Then use pickaxe to undo the farmplot/resettle the land
then hoe again
repeat
Eventually you'll RNG a new drop
(Probably best to do this on lucky, luck food ingested days)
Dumpster dive -> you can get nothing, trash or unbelievably useful meals which can sustain your actions, or be sold, and potentially you can find ores and the like.
Quarry is part of spelunking, beach is part of foraging/fish/crab
