It does not just add water held. If you click and hold it will water additional plots. I admit copper and steel are week, but since I plant 3 x 9 sections for the most part, the gold upgrade is awesome. It wasters 3x3 sections.
You can also sneak in an upgrade near the end of the season like on the 27th of that season.
Or you can just forget Watering Can at all and just do this :P (Year 1, Fall 8), although you're gunna need to be an expert fisher get level 10 fishing by Day 15 of Spring 1 and Mine level 120 by Day 18 of Spring 1!

Like how many sprinkles I have and how far and long can I water. 5 deep its too useful and easy to use.
You have to go through each of the upgrades, you can't just skip to gold.
I upgraded to copper ASAP my first year. I found the 3x1 watering range to be incredibly useful early game. I did the upgrade over a rainy day, so didn't lose a harvest.
I didn't hit the mines until winter so didn't accumulate any gold before than (which you need for the quality sprinklers). The gold and iridium watering can upgrades make getting your crops watered the first day of the season much faster, but they aren't useful beyond that since you'll most likely have sprinklers.
