He's been mature for a couple weeks now though
If it helps, ive had my pig for about 1 season, and ive gotten 3 truffles.
Alright...That still feels just overly rare.
Well, with love, thats almost 1 a week. Truffle Oil is used for mainly the rain totem, so they would want to limit the amount you have. So I dont think its totally rare, but less common due to the item you make from it.
Regardless, the only help I can actually give is, pet it daily, make sure the food is up, and others have said, make sure there is dirt around. Although, my pig finds truffles in grass perfectly fine *shrugs*

I cleared half of my grass and my pigs instantly found 3 truffles
It seems like if you are present on your farm, the pigs are more likely to find truffles (I'm not sure about that though) and sometimes it can be hard to find them if they are hidden behind something like a tree, building or gates. The "Tracker" perk is very useful here.
i'm more concerned that my cows don't give milk everyday and yet have 5 hearts.
