-First, there are the achievements, I'm currently huting down the ones I don't have yet.
-Second, as is the case for me with this kinds of games, just make up your own objectives. I spent about a season of game time planting a huge "tree farm". I knocked down almost all the trees in the farm, collected the seeds and them replanted them in neat rows, separated by paths so I could easily walk among them and collect resources (by tapping the trees, for example). Why did I do this? Because I felt like it. I saw a forum member talking about his "mapple tree" farm and thought to myself "That's something I never tried and I also have enough space on my land to do it without compromising my crops, so why not?"
Aside from that, restarting is always a choice, as I find I enjoy the beggining more than the endgame, in this kinds of games. It's very easy to go for the Joja Mart achievement if you know what to do, for example. I achieved it by mid summer year one here.

TBH, I find early game (first 3 seasons) to be the most fun and challenging of the entire game.
2nd playthrough, I had all iridium tools by the end of Fall, Year 1 XD.

- New Coop area comprising 2 x Delux coops with large outdoor fenced area
- New tree farm
- New silo
- Getting hearts with other villages (I don't like this part tbh)
- Building up a better production line
TBH I think once I have made the end of Y2 and got graded I will restart with the Jojo side of things and do things a bit differently.
I call ♥♥♥♥♥♥♥♥ on this part. That would mean you had 168,000 gold as well as 20 bars of iridium by the end of Fall year 1.
Sorry, not buying that one. Before you try defending yourself, do the math involved in the rest of the process and you will see its just not possible to do this without cheating in some way.
From someone that completed the Joja Mart achievement by mid summer year one (which includes gaining about 150k) I'll say that it would be hard, but far from impossible.
Edit: Completing the Joja Mart thing includes unlocking the desert, and I was also at mine lvl 120 at that point, so I had access to the skull mine. Finding iridium has become much easier after the last patches, especially if you know how/where to look.

You don't need to choose Joja Mart to get to the desert. You have to work on community bundles though to unlock the bus repair. If you take the Joja Mart route you just pay gold instead.
You can go to the desert. The only "gameplay" difference is you have to pay money for the Community upgrades (fixing the bus, the rail carts, the bridge to the quarry, etc) instead of giving items to complete bundles. You still get access to the same areas, except that if you go Joja the Community Center will become a warehouse, and if you complete the Community Center Bundles the Joja mart in town will close and the Community Center is restored.
