If you want to breed them you can get the slime charmer ring from Gil after killing 1000 slimes. That doesn't prevent them from getting angry, but it will prevent damage and the slime debuff.
Beyond that it also makes sense to put up some fences, so that you can enter the building safely (preferably done before breeding the first slimes)
Simply craft a slime incubator, place it anywhere outside (you can even place it in the town if you like) and put a slime egg into the machine. You can separate the different colours by enclosing them in fences or having different colours in different screens as slimes cannot enter different areas of the map from their location of origin. (e.g. slimes in the forest cannot enter the town and vice-versa)
It's worth mentioning, however, there's a chance that slimes raised outdoors on the farm itself have a chance of escaping overnight; slimes raised anywhere else will never escape.
Attacking a slime will result in a chance of it getting angry and have red eyes. Once angry, they will stay that way for the rest of their life. So if you don't want your slimes to get angry, then don't attack them. Just leave them be.
I guess I'm going to kill the red eyed slime too now, I don't want him to provoke other slimes too.
