Click on "Layout" on the upper left to pick the River Farm.
I will be sad to chop down all of my fruit trees and have to replant them. I haven't played in a few years, but if I remember correctly, older trees gave higher quality fruits.
Also might be worth to plan your farm first, so that you don't need to do it ingame

Robin can help moves buildings, Shipping bin, anything that cannot be moved via tool. Since Fruit Tree is choppable, it can't be moved.

Time is paused while player is rearranging building. Anything that is destroyed are not refundable. But gold in Stardew Valley is not very hard to earn even for casual player, thanks to Summer's Starfruit and Fishing. You will get too much Tree Saplings from Skull Cavern in Desert, so no need to worry about the loss of fruit tree too.
If you never loss anything, you will never gain anything. That's Stardew Valley.
I used to just fill the greenhouse with starfruit then make starfruit wine. It seemed profitable years ago.
For space issue, consider remove some unnecessary stuff. Such as 10+ Fish Pond to like 1 - 5. Anything that could move to Ginger Island, Farmhouse, or Big Shed, consider moving them. Ex: Tappers on trees in Desert
Just take your time and take it as a progress. Like tidying up.

If you want to try playing with mods, I recommend some mods found on the Nexus that people have already mentioned in this thread. #1: The Tractor mod makes *everything* faster. You can even go into the config file for the mod and allow it to break paths and fences, making cleanup super easy. #2: I looooove the TreeTransplant mod. You can go to Robin's and move trees on your farm like you would a building. No need to cut down your good quality trees and start over - just move them where you like. Since using this mod I've been really into orchards and lining pathways with fruit trees, and I'm not scared to buy them earlier in the game. I buy however many I can afford and plop them down anywhere, knowing I can always move them somewhere pretty later if my farm plan changes.
Ooh! Can I install the tree transplant mod, move the trees, then uninstall the mod? I don't want to "cheat" but I really want to rearrange my farm without losing a bunch of work!
