He's an independent developer, this is mostly a solo project. He's probably been successful enough that he could just retire if he wanted to. I don't think he does (want to retire), but my point is that this isn't a big corporation with shareholders to keep happy. It's a one-man show.
Stardew Valley took him about 4 years to make, I don't know if he was holding down a day job during any of that period. He may have been, but he certainly doesn't need to now. So, working on games is probably his primary focus at the moment.
But all that said, he's one guy. Individuals need to switch things up in order to remain creative.
