Stardew Valley is also not "only a farm sim". There are many other things to do in the game besides the farming part. There are other skill-related activities like mining and fishing; a whole relationship system and seasonal events, involving the townsfolk; an Animal-Crossing-style museum collection to fill out; the Community Center bundles (which are considered the "main" goal to accomplish, and involve the use of most of the game's various systems).
And there's also mods, which can add even more new concepts to the game. You can play Stardew Valley as a battle royale game, if you really want it; someone did in fact make that into a game-mode.
It has a lot of overlap.
Lesson for your life: Don't judge others by your own standards.
Both games use pixel art.
Both games use 2D sprites.
Both games let you chop down trees to collect wood.
Both games let you go fishing.
Both games have combat.
Both games let you buy and sell things.
Both games are highly addictive!
...I think you get the point.
And the good news is that there are mods which can make the game a whole lot better.
