Eh, it happens. I've bought things on a good sale, then forgotten why by the time I get around to playing it. Then, if I don't like it, maybe I get confused and start looking at the reviews to see if I'm missing something, like maybe it has a slow start or I'm not "getting" what kind of game it is. This doesn't happen with $60-70 AAA releases, but definitely does with alot of indie titles. For me, anyway.
The beauty of this game is that it can be played however you want. You can focus on fighting, on farming, on raising animals or befriending the characters of the game and solving the mysteries the game has to offer. The game is a pixel-based game which doesn't need to be your cup of tea but I think it works so well with the type of gameplay the game offers (also, the guy who built this is literally just one guy, so given that information, I think he did everything very well!)
None of this has to appeal to you, not every game is made for everyone and that's okay! But for me, it's one of the best games I've ever played, the best farming simulation by far and I absolutely adore this game.
Even after years, there are some games that always create excitement. So, how and why is it still exciting to play a game that we finished the main story of? The answer is probably hidden in human psychology.
The keyword is "Passion".
Every game is actually based on rules.. but these are such rules that their application involves flexibility and creativity. The rules of the game => are rules that can be manipulated. These are not explicit formulations. Their application often forms the domain of what is called "tacit knowledge".
Tacit knowledge is the knowledge of experience that a person can not give a full explanation most of the time, but can still fulfill: such as swimming. Such knowledge cannot be learned by transferring theoretical formulations on paper; but requires application. In games there must be a special kind of rules that make tacit knowledge => "knowledge of experience" possible.
Since tacit knowledge cannot be formulated clearly, it is claimed that humans will always be superior to artificial intelligence,
because artificial intelligence cannot be applied except by clearly formulated rules..
.. for this, the best chess player was able to win a game against the highest level computer.
Schiller's phrase "Playing games makes people human".. comes up again in a new context here. Indeed, only man can play, for only man can put into practice a kind of knowledge which he cannot explain.
We still get bored of all the games, it's a sad thing..
.. because it has been claimed many times that the social world can also be explained with the metaphor of the game.
The games we get tired of the hardest are still the ones in the social world, because they have the most complex structure...
... either in virtual or real life.

It's definitely a slower paced chill game, I can see why it might not be for you. Games like stardew are probably more niche anyway. If you got a few hours out of it then that's cool. You gave something new a shot and theres no harm in that. You might come back to it in the future when you've had your fill of fast paced games and just want something to relax into.
As far as the retro graphics, that is more of an acquired taste. Some people prefer them, some can't stand em. I prefer 3d high res games personally but this wasn't the worst use of 2d ive seen.
