I just built a few beehives and collect the honey once in a while and she's fine with that.
Sebastian is super-easy once you have a kitchen and know the Sashimi recipe.
Leah is ridiculously easy, as long as you know where to actually find her. She Likes almost anything you pick up off the ground, and loves Salad (which is cheap, easily-acquired, and she's often in the same place that you acquire it).
Haley has an early Spring birthday, so even with only Liked gifts you can get her up there pretty quickly.
Next is penny, grow melons in the summer and save them, and before that you can pick her dandelions (she likes them, not loves them) for free in the spring. Then Abigail and Haley, you can grow pumpkins and sunflowers in the fall respectively. Leah is the "hardest" for a fast marriage, because early on salads can hit your wallet and the artisan goods require some farm improvements.
For men, Harvey is the easiest because he loves coffee from the bar, then Sebastian only if you get the sashimi recipe (which took me a while). Then Sam because he loves pizza from the bar, Elliot duck feathers (requires coop with ducks), then Alex who requires elaborate recipes like "complete breakfast."
Sam is easy to please because trash-diving in town often yields Joja colas, and damned if he isn't the only person in town who likes them. Haley loves the daffodils that grow freely about town in the very first Spring (I'd say she's probably the absolute easiest person to get to 4 hearts before the Spring festival, and actually be able to dance with her).
Leah is also an inviting target in that she really likes practically all edible forage items. That means you can often find a good gift for her literally on your journey to her location, and not need to have it stored up in advance.
Bottom line, they're ALL easy to woo once you get a few game hours logged. Remember you don't have to give them something on their "loved" list to get them to 8 hearts -- making absolutely sure to give them a "liked" gift on their birthday and keeping a good working knowledge of the concept of "universal likes" (stuff almost all villagers will accept and be happy for) is often enough to win anyone over. Never letting a week pass without getting both gifts in is key; it'll happen fast no matter who you pick if you do that.
Of course, hitting the jackpot and having an item available from their "loved" list on their birthday jumps you up two hearts in one go. That's hard to beat, but ... meh, you don't really need that boost if you just chip away at them every day.
Pick which character you actually like the best. This is probably one area of gameplay that absolutely should not be about min/max mentality.
Similarly, Leah "Likes" virtually all forage items. But since her birthday is later, you'll need to rely on "Loved" items (i.e. Salad) if you want to dance with her the first year.
Otherwise, yeah. None of them are really that difficult once you're a short ways into the game and assuming you're actually paying attention.
If you love to mine and will pick inceased gem drops Abby is an easier choice.
If you're going gatherer and raising a lot of farm animals leah is even easier.
