With Sandy, Marnie, and Emily I could see some stuff, stuff that makes at least some amount of sense, mind you.
These Special tasks were add appeal to marrying a specific person, too, albeit, possibly not based on the fact that you like them/how they look. (Marrying for their benefits, tsk tsk)
I think Sandy would be "a" pretty interesting "one" particularly.
Shane and Marnie might Share similarities in theirs....Though that could be manipulated so they were different enough.
Wizard would be interesting, like Sandy....Just too bad that not only would I never be able to really post this absurdly long suggestion, But it'd be a lot of work for someone(CA) to do, and even if it were accepted, would take some time. But It'd probably pay off.
The thing about Maru and Harvey is if you marry one of them, the other one could fill in for the counter job. I suspect ConcernedApe deliberately developed it this way to ensure that someone would be at the counter.
If you marry Marnie, Sandy, Robin, Clint, then there should be another NPC to fill in their role as shopkeeper. I already get annoyed by the shopkeeps spending more of their time at Coummunity Center, marriage would make it even more annoying when you want to buy more hay.

Nobody can replace Clint. Nobody else is a Blacksmith like his family has been.
The perk is whenever Clint isn't off the farm, You'd be able to ask him to perform duties, increasing the time YOU.. and only you, can engage with his "shop"
Possible other benefits of the marriage might be that YOU become your new source for Processing tool upgrades and geodes, and are given the blueprint for an Anvil and Forge upon Marriage, and you'll be able to spend an incredibly shorter time upgrading your tools, and batch processing geodes (something people already want)
Nobody can replace Robin. While Lumberjack may be something anyone can do. Woodwork is not. Leah works with wood and might be able to do some small part to replace Robin, but nobody in their current generation can replace her.
She'd still go off to the Tuesday exercise meetups but her shop would be more accessible to you more often (giggity giggity goo version: The exercise meetup comes to your place from then on, Hohoho ho hueee) (replace laughter with Markiplier's Forrest Byrnes Impression)
Shane might be able to theoretically replace Marnie. Actively Quitting Joja if its not gone yet, and not having a job otherwise, he /could/ spend large amounts of time (the same amount of time he spent at Joja) manning the register in Marnie's absense.
Possible perks might be that Shane sends a small "cashback" in the mail every so often from the profits he's made running /her/ farm. Certainly nothing to rely upon, but something.
Marnie could still take the store with her, Like I said, Shane isn't paying the bills working at Joja and wasting his money on Beer and Pizza, So they may just be moved in as your "children" that you adopt.
Probably anyone could replace Sandy.... namely the Bouncer... or anyone who can't be reached normally in the casino... (chairs and stuff block the way)
