Cavern. Bombs, Luck/Speed food, stacks of stone to build staircases. Spam ladders until you find a floor with close ores, then continue down. The lower you go the more likely to find ores.
Also in the instance you're farming iridium for sprinklers, you can speed up the process by buying a Tier 3 sprinkler from Krobus in the sewers every Friday.
Theres also a mid-late game way to make the iridium hunting unnecessary, but ill leave that for you to figure out to avoid spoiling it for ya.
You don't even need that to get those fish, I just caught my first legendary with level 8 fishing, no buffs from food, a trap bobber, and determination not even ten minutes ago, and I only started playing the game yesterday.

Coincidentally I also snagged a chest with a piece of iridium ore and two fire quartz with the fish, so yeah, not sure why OP is complaining about the difficulty of finding either.
It's true, they can be caught even without tackle, bait or food buffs. I caught the Legend under such conditions just the other night:

besides the rant, here is easy tips for ya..
Fish, eat the sea food dinner, and have fishing 9 to 10.. the dinner will add + 3 to it. buy or make a trap bobber or cork to place on your fishing rod..
Mining for Iridium in the skull caves... Make bombs/stairs, bring lots of food and be SURE to check the tv for your luck, cause that will help a ton in finding shafts in the skull cave..

My advice:
Iridium Ore: You'll want to devote entire days to Skull Cavern. Kill every big slime you find in the rare event the little guys drop ore. Bombs. Luck food (Spicy Eel drops from the flying guys, which is perfect). Iridium Ore spawn chance increases every 10 levels. If you get some luck with the drops, you'll start finding a bunch of ores in the late 30's, 40's, and 50's. Farthest I've made it is 51 in a single day, and at that level there were 3-4 ore veins per floor. Normally get down to the 30's or early 40's in a day.
Fish: As others have said, Level 10 with +3 food, trap bobber. Past that it is just a matter of persistance and getting used to the darting pattern.
Geneses, was it really necessary to insult and berate OP? People have different play styles and skill levels. Nothing wrong with that.
