Somewhere there is a map with the paths the NPCs follow, just plant them away from those spots and your trees are safe.

I plan to embellish the town at some point with some fruit trees :p

It's been patched. You can no longer plant fruit trees outside of your farm(and greenhouse)

Plant them around the perimeter of the greenhouse never need that much fruit.

Although fruit trees around Stardew Valley were nixed, but regular trees still can be planted in certain places. So far, I've found the desert, beach, ground west of Linus' hut, train station, various patches of dirt between the carpenter and quarry, patches between carpenter and your farm, etc

And if you just cut enough to topple the top part of the tree, leaving the stump, the tree will regrow faster.

In other words, you can have more wood from trees that you planted around. or more tapping items around the trees at various points of the valley.
