Edit: Trap Bobbers slow down a fish's "escape," so it's more forgiving when you're trying to catch back up to the fish. Cork Bobbers, I think, increase the size of the "reeling bar", so it's easier to stay on-target.
However, if you catch a fast fish, you will have to play and the barbed hook will make your input extremely inaccurate, thus proper feedback is lost entirely. I'd be ♥♥♥♥♥♥♥♥ amazed if someone could catch a legendary with a barbed hook.
