Anyway to get off-season seeds?

I got the quest to put 10 Beets in the Mayor's fridge but i'm in winter the shop doesn't sell any seed. Is there no choice but for me to wait till next year.

The travelling marchant might sell the seed packet or the crop itself which you can throw into a seed maker. Can plant and multiply any seed if you have a greenhouse, slowly but surely depending on how many seeds you have.

You can use a seed maker to make the beet seeds and plant 'em in your green house.

(There won't be any seeds sold in winter fyi.)

I have 1 Beet that i throw into the seed maker and got 1 seed back. At this rate i think i should just wait till next year.

It gives 1-3 seeds. You just got unlucky. Average you double the seeds from crops. AKA you put in 50 beets you'll end up with about 100 seeds. Your choice if you want to wait it out but you could multiply that seed. Just be warned though, there's a s light chance any seed will produce a mixed seed instead of the normal crop's seed.

Does reloading the save change how many seed i get from the seed maker or is it predetermined?

I believe that depends. If you put them in at the exact same time you'll probably get the same result.. but try it at a different time or day (maybe move the maker to another spot) and that may alter the result. Give it a try if you're up to the test.
