honestly though it's basically just harvest moon. you make a farm, you pick someone to marry, you struggle through the fishing mini game until your mouse breaks. it's really fun if you're into chill stuff like animal crossing.
The game also plans on getting multiplayer eventually, so you can enjoy the game with your friends when it does come out. Plus there are always new things being added, such as the latest v1.07 beta patch: https://dd.reddit.com/r/StardewValley/comments/4c93ns/v107_beta_branch_bugsdiscussion/
You can build yourself a farm and grow multiple crops which you can sell or make Wine or Jelly and stuff like that out of them. You can buy coops and barns for animals, too. You are able to mine for resources and monster loot, go fishing for Legends and other artifacts and you can have relationships with the townspeople (there will also be really cool cutscenes with them, plus they will send you gifts). You will be able to upgrade your skills for new crafting recipes and for choosing a profession, where you will get extraskills. There will also be minigames like Arcade Games and competitions between the townspeople and you.
I think it's fun to play, even if the things up there may sound like boring ♥♥♥♥, but it isn't when you play.

The best thing, is that you can choose how you do them. This may seem obvious, but other games often put in constraints and time limits that mean you have to focus on one thing or the other in order to progress.
In Stardew Valley, you can choose to spend a day in the mines, or fish, or socialize, or forage etc. Or do a bit of each. Or just tidy your farm up and organize things a bit. You won't lose progress, and if you miss a quest or an event, they will roll around some other time. You are able to relax and choose what you want to do.
