A stamina penalty in harvestmoon is a lot more harsh than here because here sprinklers can do the majority of the work. And since we have things like the skull dungeon where the rewards increase the deeper you go. Not only that swords use no stamina so the penalty wouldn't affect combat at all.
To balance never needing to sleep, food would need to take a huge Energy nerf.
I think the fact that you can only save by sleeping already acts as a pretty good balance here, if you stay up all night you'd have to either waste the entire next day sleeping in order to save or risk losing all the progress you made.
