And I'm fairly certain it's absolutely required to plant the crops in the grid at the same time, keeping them always in the same stage of growth.
Initially I wasn't going to try the let-it-sit idea either, but it was a tip from a Giant Crop tutorial on YouTube so I was just experimenting. I think I may have even heard it mentioned on multiple videos but can't remember now.
Each 3X3 grid of fully mature (harvest ready) plants which are watered have a chance to fuse into a giant crop.
If you don't have an upgraded watering can, one trick is to aim your character towards the spot you want to water and click after or before the harvest ready crop.
Once a giant crop is realized and or there is no 3x3 potential...stop watering those. Only water the potential (min 3X3) harvest ready crops.
Having a steel watering can is extremely helpful unless you have grid greater than 10 x 10; 100 crops.

That's what the Wiki says. From my experience the giant crops only appear on the day/night of maturity. Maybe your best chance is the day of maturity and a lesser chance once matured. Or it could just be my RNG. Either way the above posters have it right - upgrade your watering can so you have a AOE.
Although if you do cut down the giant crop with an axe you get more than 9 produce - its not all about money and if you like them, you keep them :)

the reasonable ways to do it is to use upgraded irridium sprinklers. which have a 7x7 tile range with the sprinkler in the center.
you can still get giant crops by watering the fully mature crops.
if you have a 3x3 crops, you only need to water the middle one.
if you already upgrade your watering can. and playing with mouse & keyboard.
you can hold down the left click (watering button) and charge the can.
with this, your character won't harvest the crops
