Even with profession boosts, the time it takes to grow and max hearts (and max revenue from selling them) makes animals a very poor source of revenue/day. Animal products are decent enough revenue, but if you're goal is to keep the animal, then the time it takes to fill the coop is irrelevant. A full coop won't be incubating anything.
I'm not sure what your goal is in determining this information. If you want another animal without paying a lot to get one, hatch an egg. It takes as long as it takes, and it'll take even longer because babies don't grow to a productive age for a while.
The break even point for buying a chicken is 20 eggs, assuming no large eggs/mayo, however eggs are not guaranteed each day. The break even is only 6 eggs if all are made into mayo (probably near impossible to get a large egg within 1 week). It takes too long to hatch and grow chickens to a productive age. If you want revenue, just buy chickens.
The break even point for buying a duck is 54 eggs, assuming no mayo, with no guarantee of an egg every second day (over 108 days to break even). But with duck mayo, it's only 14 eggs (still takes at least 28 days).
Interesting note: someone with a Rancher Perk actually loses out in terms of money when they making Artisan goods than an unperked player. A Rancher will make 4 less G on mayonnaise and 7 less G on gold star mayonnaise and duck mayonnaise. This is due to the Rancher's Animal Products being more valuable as a raw good.
