Stardew, for me at least, strikes just the right balance between depth and variety in content and simplicity, and it introduces new concepts at just the right pace and days last just long enough. A lot of later Harvest Moon games have days that drag on, to the point that I find myself going to bed in early afternoon or running around catching bugs or something half the day because there's nothing else to do. Newer HM games also tend to take way too long to introduce core gameplay concepts, new townspeople, etc., and many of them feel a bit bogged down in side activities or intrusive story elements that feel like they get in the way of the core experience a little bit, instead of enhancing it. To my mind, Stardew gets basically all of these things right.

the game doesnt 'end' after 3 years, in HM you get stuck after 3 years and if you didnt reach the 'goal' you're game over. Yeah, start over why don't ya.
Wife/Husband in HM have less variety, that is true. in HM they let you marry the ♥♥♥♥♥♥♥ goddess for crying out loud! or the witch, if you so desire... BUT in Stardew Valley you have the option to be gay/lesbian and it won't crush your dream of a happy family! You can have kids no matter who you choose. Too bad you can't marry the Wizard. But I am sure....
Yep, I am sure MODS will help with that! A big PLUS for Stardew is the MODDING of the game. Sometime in the future we will see the HM goddess being modded into Stardew and marriage compatible. or the witch, or Celia (for the old-school fans) or any pokemon... i'm threading on dangerous ground when I say this : Stardew has the potential of becoming a monster. The possibilities are endless, limited only by the game's engine. I mean... I've got a Luna (sailor moon's cat), married to Winry (FMA) playing as Ash Ketchum.... Jas is Alice in wonderland (I saw a mod for Jas, marriable and yandere... scary) All my cows are Tauros and Milktank, horse is Rapidash, Abigail is a ♥♥♥♥♥♥♥ centaur... should I keep going?
All in All, even thoguh I LOVE Harvest Moon, it's Stardew Valley that wins the contest. hands down. I mean... if you prefer HM... you can always mod Stardew to be identical to HM... the gameplay is very similar in the end. so why not?
I also like being able to give as many gifts as I have and talking to people as much as I like. And people who I become great friends with I can enter thier places at times I usually couldn't like entering the store when its closed.
That theres lots of festivales with worthwhile rewards and theres festivales for my horse, dog, horse, and livestock.
That you kind of see people grow up and the community can help people like cliff. Duke becomes a better person, gray earns some respect from his grandfather. People grow up and marry thier true loves. As the player there are some characters who you can affect if they leave or stay year round.
To me the Btn town feels more real as a living, breathing whole. While stardew I feel like has little holes here and there. Little touches like a police officer, Zack who picks up your bin and pays you each day, livestock split to two families (Both of who are responsible and not marine), the whole marrying thing, so on.
