Just to check and see if it is the game, or your saves?
You might still be able to save them.

To further explain, basically there is a copy in your saves with an "old" prefix, which is a day behind your current save. Maybe if you backtrack to this older day, the corruption to your saves from your mods may not have happened yet.

So you can't find the files in the folder labled as old? :( Or it just didn't work?
Either way...don't lose hope! Now you are an experienced farmer. Tackle the challenge again, but take a different route. Take heart that multiplayer comes soon which will be a whole different ball game. I suspect we won't be able to use old saves to play multiplayer anyway, but I could be wrong.
Alternatively, keep learning more about mods! You've got nothing to lose now right? With a little reading, you can make back all that lost progress. I mean, you can't get back to the point in time you lost, but you could start over with extra cash, some items, some upgrades, new game+ that! You've earned it.
In the official forums you can upload your savegame and, i think it was the developer, fixed it. But im not sure.
How, if you replaced files, you may have to delete from the game from Steam, remove the folder completely, and reinstall.
