They bring more money if you sell them, they have better stats and you can use them for a festival.

They also give you more energy and healing if you eat them.

Ok so i shouldnt save them to make stuff? i should sell them? And use the regular quality to make stuff?
From what I've read and tested, the quality of the ingredient doesn't change the end product's price when it comes to using kegs and preserve jars. This aspect might be changed later, but yes, you can use regular quality crops for wines and such and selling excess gold-star crops would be the most profitable, although there are other uses like enjoying a great snack or displaying them as bragging rights for the fair.

I should also point out it matters more what you put in, if you don't know. For example, if you make jelly with salmonberries, it will sell for only 60 gold. When using a starfruit, it's 1650 gold - a BIG difference!
However, the value of the jelly stays the same, whether you use a regular or gold quality crop. A regular starfruit's sale price is 800 and the gold one is 1200, so definitely use the regular and sell the gold.

but the gold will still give more money when preserved/Kegged, over selling. Only sell if you have wayy to much product

They make better wine/juice, so save them for that. Don't use them to make preserves, as the base quality makes no difference there.
